Instant Pot Detox Soup with Local Curation

Give your week a boost with our flavorful Instant Pot Detox Soup. A nourishing blend of fresh veggies and feel-good, anti-inflammatory herbs like turmeric, ginger, lemon, and cumin. It's bright, flavorful, and surprisingly simple to make. Perfect for busy weeknights or weekend meal prep.

Get cooking: Serves 6, 60 minutes prep time, 30 minutes cook time. Ingredients: 2 T Sebastian's olive oil or avocado oil, 1 large yellow onion, chopped, 2 large carrots, chopped into ½ inch rounds, 2 celery stalks, thinly sliced, 5 cloves garlic, minced, 1 T freshly grated ginger, 2 T freshly grated turmeric, 1 t sea salt, ½ t ground pepper, 1 large red bell pepper, thinly sliced, 10 oz chili-dried chilies, 6 C vegetable broth, 1 LBS 5 oz canned coconut milk, 1 thinji curly kale, roughly chopped, 2 L coconut aminos, 1 tanari, coconut amimo or soy sauce, ¼ t fresh cilantro, plus more for toasting.

Steps:

1. Add oil to Instant Pot and set to sauté.
2. Add onion, carrots, celery and sauté for 5-6 minutes, stirring occasionally.
3. Add garlic, ginger, turmeric, cayenne, salt and pepper. Sauté for 1 minute.
4. Add bell pepper, vegetable broth, coconut milk and cilantro to the Instant Pot.
5. Place lid and lock. Make sure the pressure release valve is closed.
6. Press "Pressure Cook" and set for 15 minutes on High pressure.
7. Once the timer reaches 0, the cooker will switch to keep warm.
8. Manually switch the pressure release valve to open to quickly release steam.
9. Once the steam is fully released, remove lid and use a meat shredder or fork to shred chicken.
10. Add kale, coconut aminos, tanari and cilantro to Instant Pot while set to warm.
11. Once kale has wilted a bit, pour soup into bowls. Serve with chopped cilantro or toasted sourdough.
